Chip Cassidy, Hospitality Management Professor


I like to say I’m a storyteller, especially in the classroom. If you tell a story then your audience is more likely to listen – you can engage them rather than just dispense information.

I’m a wine technology professor at FIU and the director of our beverage program. In my 25-year career as an educator, I have traveled a lot, tasting about 5,000 wines a year.

I still say my favorite wine is probably the one I’m going to drink tonight. It’s a good thing I can tell a good story. I didn’t set out to be a teacher.

As a retailer, I ran a wine club many years ago – I felt I had to educate my community about wine: most people drink white wine too cold and red wine too warm.

Rocco Angelo from the School of Hospitality approached me and essentially brought me back to FIU where I’ve been teaching ever since. I loved coming back to my alma mater and I love to teach about wine.
